For the Salad: 1 lb cooked shrimp peeled and deveined 2 apples Honeycrisp, Fuji, or Granny Smith ½ cup sliced almonds toasted 4 cups mixed greens spinach, arugula, or romaine ½ cup crumbled feta or goat cheese optional For the Dressing: 3 tbsp olive oil 2 tbsp apple cider vinegar 1 tbsp honey or maple syrup 1 tsp Dijon mustard Salt and black pepper to taste
