A fresh, crunchy chicken salad with diced apples, halved grapes, celery, and a creamy honey-Dijon dressing. Great for lunches, sandwiches, or light dinners.
Dice the chicken, core and chop the apple (leave skin on if desired), halve the grapes, and slice the celery. Toast the nuts in a dry skillet over medium heat for 3–4 minutes if using.
Whisk together mayonnaise (or mayo + yogurt), Dijon, honey, and lemon juice. Season with salt and pepper and adjust to taste.
In a large bowl, gently fold the chicken, apple, grapes, celery, and parsley with the dressing until evenly coated. Sprinkle toasted nuts on top. Chill 15–30 minutes before serving for best flavor.
Serve over greens, on croissants or bread, or in lettuce wraps. Store leftovers in an airtight container in the fridge for up to 3 days.
