  • Heat olive oil in a skillet over medium heat. Add the diced onion and bell pepper. Sauté until soft, about 4–5 minutes. Add garlic and cook 1 minute more.

Brown the Chicken:

  • Add ground chicken to the skillet. Break it apart with a spatula and cook until no longer pink.

Add Seasonings:

  • Sprinkle in Cajun seasoning, smoked paprika, salt, pepper, and optional red pepper flakes. Mix well so the chicken is evenly coated.

Make the Sauce:

  • Stir in tomato sauce, ketchup, Worcestershire sauce, brown sugar, and chicken broth. Bring to a simmer.

Simmer & Thicken:

  • Reduce heat and let the mixture cook for 8–10 minutes until thickened and saucy.

Assemble the Sloppy Joes:

  • Toast buns if desired. Spoon the Cajun chicken mixture onto each bun. Add pickles or coleslaw if you like.

Serve Warm:

  • Enjoy immediately while the mixture is hot and flavorful.
