Carne guisada is a comforting, slow-simmered beef stew packed with bold flavors and tender beef. Perfect served with tortillas, rice, or potatoes, this easy one-pot meal is rich, savory, and deeply satisfying.

Instructions
Brown the Beef:
Heat oil in a large pot over medium-high heat. Sear beef on all sides until browned. Remove and set aside.
Sauté the Vegetables:
In the same pot, sauté onions, garlic, and bell pepper until softened. Add diced tomatoes and cook until they begin to break down.
Simmer the Stew:
Return the beef to the pot. Stir in tomato paste, cumin, chili powder, paprika, salt, and pepper. Pour in beef broth until the beef is mostly covered. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, stirring occasionally.
Thicken and Season:
Uncover the pot for the last 15-20 minutes to allow the gravy to thicken. Taste and adjust seasoning if needed.
Serve:
Garnish with fresh cilantro if desired. Serve hot with flour tortillas, rice, or mashed potatoes.
