  • 2 slices sourdough bread or bread of choice
  • 1 cooked chicken breast sliced thin or shredded
  • ½ ripe avocado mashed or sliced
  • 2 slices cheddar mozzarella, or provolone cheese
  • 1 tbsp mayonnaise or butter for spreading on bread
  • 1 tsp Dijon mustard optional
  • Pinch of salt and black pepper
  • Fresh spinach or tomato slices optional, for extra flavor

Instructions
 

  • Prepare the bread: Spread mayonnaise or butter on one side of each slice.
  • Layer the sandwich: On the unbuttered side, spread a thin layer of Dijon mustard if using. Add chicken, avocado, cheese, and optional spinach or tomato slices. Season lightly with salt and pepper.
  • Cook the sandwich: Heat a skillet or pan over medium heat. Place the sandwich in the pan, buttered side down. Cook for 3–4 minutes until golden brown. Flip and cook the other side until cheese is melted and bread is crispy.
  • Serve: Remove from the skillet, slice in half, and serve warm.

Notes

  • Use rotisserie chicken for a quick shortcut.
  • Swap sourdough with whole grain, rye, or ciabatta for variety.
  • For extra flavor, add a sprinkle of chili flakes or garlic powder before grilling.
