These Chocolate Covered Strawberry Brownies combine rich, fudgy chocolate with juicy strawberries and a smooth ganache topping. Perfect for Valentine’s Day, date nights, or when you crave an elegant dessert that’s easy to make and impossible to resist.
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Make the Brownie Batter:
In a large bowl, whisk together melted butter and sugar until smooth. Add eggs and vanilla extract, whisking until glossy.
Sift in cocoa powder, flour, and salt. Stir until just combined — do not overmix. Fold in chocolate chips.
Add the Strawberry Layer:
In a small bowl, toss sliced strawberries with sugar and lemon juice. Pat dry gently with a paper towel, then layer the strawberries evenly over the brownie batter.
Bake:
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
Allow brownies to cool completely before adding the ganache.
Prepare the Ganache:
In a small saucepan, heat heavy cream until it begins to simmer. Pour over chocolate chips and let sit for one minute.
Stir until smooth and glossy. Add coconut oil or butter for extra shine, if desired.
Assemble:
Pour the ganache over the cooled brownies and spread evenly. Refrigerate for 30 minutes before slicing into squares.
Notes
Don’t overbake — slightly underdone brownies will stay soft and fudgy once cooled.
Dry strawberries well to prevent extra moisture in the batter.
Chill before cutting for clean, professional-looking layers.
Add a sprinkle of sea salt flakes on top for a gourmet touch.
