Preheat and Prep:

  • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.

Make the Brownie Batter:

  • In a large bowl, whisk together melted butter and sugar until smooth. Add eggs and vanilla extract, whisking until glossy.
  • Sift in cocoa powder, flour, and salt. Stir until just combined — do not overmix. Fold in chocolate chips.

Add the Strawberry Layer:

  • In a small bowl, toss sliced strawberries with sugar and lemon juice. Pat dry gently with a paper towel, then layer the strawberries evenly over the brownie batter.

Bake:

  • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  • Allow brownies to cool completely before adding the ganache.

Prepare the Ganache:

  • In a small saucepan, heat heavy cream until it begins to simmer. Pour over chocolate chips and let sit for one minute.
  • Stir until smooth and glossy. Add coconut oil or butter for extra shine, if desired.

Assemble:

  • Pour the ganache over the cooled brownies and spread evenly. Refrigerate for 30 minutes before slicing into squares.

Notes

  • Don’t overbake — slightly underdone brownies will stay soft and fudgy once cooled.
  • Dry strawberries well to prevent extra moisture in the batter.
