Prepare the Crust:

  • In a bowl, mix graham cracker crumbs, melted butter, and sugar.
  • Press firmly into a lined 8×8-inch pan.
  • Chill in the refrigerator while preparing the filling (or bake at 350°F for 8–10 minutes for a firmer crust).

Make the Chocolate Filling:

  • In a saucepan over medium heat, whisk together milk, cream, sugar, and cocoa powder.
  • In a separate bowl, whisk egg yolks and cornstarch.
  • Slowly add warm mixture to egg mixture, then return to the pan.
  • Cook while stirring until thickened.
  • Remove from heat and stir in vanilla extract.

Assemble:

  • Pour the chocolate filling over the crust and smooth the top.

Chill:

  • Refrigerate for at least 3 hours, or until fully set.

Prepare Whipped Topping:

  • Whip heavy cream, powdered sugar, and vanilla until soft peaks form.

Decorate:

  • Spread or pipe whipped cream over the bars.
  • Add chocolate shavings or chips.

Serve:

  • Slice into bars and serve chilled.

Notes

  • Chill completely before slicing for clean layers.
  • Use a warm knife for neat cuts.
  • Do not overcook the filling to keep it smooth.
