Instructions
Prepare the Garlic: Roast peeled cloves at 400°F (200°C) for 20 minutes until golden, or sauté in olive oil until soft and fragrant.
Build the Base: In a large pot, heat oil or butter. Add onion and cook until softened. Stir in garlic, thyme, and bay leaf. Pour in broth and bring to a simmer.
Simmer: Let the soup cook for 20–25 minutes so flavors meld together.
Enrich the Soup: Whisk in eggs slowly while stirring (optional) for a silky texture. Add cubed bread and let it soak briefly in the broth.
