Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Cook the breakfast sausage in a skillet over medium heat until browned and fully cooked. Drain excess grease and set aside.
In a bowl, whisk eggs with milk, salt, and pepper. Scramble gently in a skillet until just set. Remove from heat.
Slice the slider buns horizontally. Place the bottom halves into the prepared baking dish.
Layer the cooked sausage evenly over the buns, followed by scrambled eggs and shredded cheese. Add any optional toppings if using.
Place the top halves of the buns over the filling.
In a small bowl, mix melted butter with garlic powder and smoked paprika. Brush generously over the tops of the buns.
Cover loosely with foil and bake for 15 minutes. Remove foil and bake an additional 10–15 minutes, until cheese is melted and tops are lightly golden.
Let rest for 5 minutes before slicing and serving.
