Ingredients
  

Steak:

  • 1 ½ lbs flank steak or sirloin thinly sliced
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Cowboy Butter Sauce:

  • ½ cup unsalted butter melted
  • 2 cloves garlic minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • 1 tsp red pepper flakes
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh chives chopped
  • Salt and black pepper to taste

Sliders:

  • 12 slider buns lightly toasted
  • 6 slices provolone or Swiss cheese halved

Optional toppings:

  • caramelized onions, arugula, or pickles

Instructions
 

  • Make the Cowboy Butter: Melt butter in a saucepan over low heat. Add garlic and cook for 30 seconds until fragrant. Stir in Dijon mustard, lemon juice, paprika, cayenne, and red pepper flakes. Season with salt and black pepper. Remove from heat and stir in parsley and chives. Keep warm.
  • Cook the Steak: Season sliced steak with olive oil, salt, and black pepper. Heat a skillet or grill pan over medium-high heat and cook until medium-rare. Let rest, then slice thinly against the grain.
  • Assemble the Sliders: Place steak slices on toasted slider buns. Add half a slice of cheese to each and let it melt slightly. Drizzle generously with cowboy butter. Add optional toppings like caramelized onions, arugula, or pickles. Close with the top bun and serve warm.

Notes

  • Cowboy butter can be made a day ahead—just reheat gently before serving.
  • Don’t overcook the steak; medium-rare ensures the best flavor and texture.
  • For extra crunch, lightly toast buns with a brush of butter before assembling.
