  • 1 cup fresh crab meat (lump crab meat works best)
  • 1 cup heavy cream
  • 4 egg yolks
  • 1 tbsp granulated sugar
  • ½ cup grated Parmesan or Gruyere cheese
  • ¼ tsp paprika
  • A pinch of cayenne pepper (optional, for a hint of heat)
  • 1 tsp Dijon mustard or mustard powder
  • Salt and freshly ground black pepper to taste

Instructions
 

Step 1: Prepare the Crab Mixture

  • Cook fresh crab meat, or use pre-cooked crab at room temperature.
  • Season the crab with a pinch of salt, paprika, and optional cayenne pepper.
  • Mix gently to distribute seasoning evenly.

Step 2: Whisk the Egg and Cream Mixture

  • Combine egg yolks, heavy cream, Dijon mustard, salt, and pepper in a bowl.
  • Whisk until smooth and creamy, avoiding foam formation.

Step 3: Assemble the Brulee

  • Divide seasoned crab meat into ramekins.
  • Pour the custard mixture over the crab, fully covering it.
  • Tap ramekins lightly to remove air bubbles.
  • Sprinkle grated Parmesan or Gruyere cheese on top.

Step 4: Bake to Perfection

  • Preheat oven to 325°F (160°C).
  • Place ramekins in a water bath within a baking dish.
  • Bake for 35-40 minutes until custard sets with a slight jiggle in the center.
  • Cool slightly, refrigerate for 1-2 hours to meld flavors.

Notes

  • Use high-quality crab meat for best flavor and texture.
  • Can be made ahead and gently reheated before serving.
  • Don’t overbake—the custard should be silky, not stiff.
