Instructions
Cook the chicken
Heat olive oil in a large pot over medium heat. Add chicken and cook until fully cooked through. Remove, shred, and set aside.
Build the flavor base
In the same pot, add onion and cook until softened. Stir in garlic and taco seasoning and cook for 30 seconds until fragrant.
Add liquid ingredients
Pour in chicken broth and diced tomatoes. Bring to a gentle simmer.
Make it creamy
Reduce heat to low. Stir in cream cheese until fully melted and smooth, then add heavy cream.
Finish the soup
Return shredded chicken to the pot along with any optional add-ins. Simmer for 10–15 minutes. Taste and adjust seasoning.
Serve
Ladle into bowls and add your favorite toppings.
Notes
For a lighter version, use reduced-fat cream cheese and milk instead of cream.
Avoid boiling after adding dairy to keep the soup smooth.
