Instructions

Cook the chicken

  • Heat olive oil in a large pot over medium heat. Add chicken and cook until fully cooked through. Remove, shred, and set aside.

Build the flavor base

  • In the same pot, add onion and cook until softened. Stir in garlic and taco seasoning and cook for 30 seconds until fragrant.

Add liquid ingredients

  • Pour in chicken broth and diced tomatoes. Bring to a gentle simmer.

Make it creamy

  • Reduce heat to low. Stir in cream cheese until fully melted and smooth, then add heavy cream.

Finish the soup

  • Return shredded chicken to the pot along with any optional add-ins. Simmer for 10–15 minutes. Taste and adjust seasoning.

Serve

  • Ladle into bowls and add your favorite toppings.

Notes

  • For a lighter version, use reduced-fat cream cheese and milk instead of cream.
  • Avoid boiling after adding dairy to keep the soup smooth.
  • Great for meal prep—flavor improves the next day.
