Build the base

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened. Stir in garlic and cook for 30 seconds until fragrant.

Cook the meat

  • Add ground beef or sausage. Cook until browned, breaking it up as it cooks. Drain excess fat if needed.

Develop flavor

  • Stir in tomato paste and cook for 1–2 minutes. Add crushed tomatoes, broth, Italian seasoning, basil, salt, and pepper. Bring to a gentle simmer.

Cook the pasta

  • Add broken lasagna noodles. Simmer for 10–12 minutes, stirring occasionally, until pasta is tender.

Make it creamy

  • Reduce heat to low. Slowly stir in the cream and let warm through for 2–3 minutes without boiling.

Serve

  • Ladle into bowls and top with ricotta, mozzarella, Parmesan, or fresh herbs as desired.

Notes

  • Add cream over low heat to prevent curdling.
  • Pasta will continue absorbing liquid—add extra broth when reheating.
  • For best freezing results, freeze the soup without pasta and add fresh noodles when reheating.
