This Creamy Sausage Tortellini Soup is warm, comforting, and loaded with flavor. With savory Italian sausage, cheese tortellini, tender vegetables, and a silky broth, it’s the perfect cozy meal for any day of the week.
Heat olive oil in a large pot. Add Italian sausage and cook until golden, breaking it into small pieces as it browns.
Sauté Vegetables
Add the onion, garlic, carrots, and celery. Cook until softened and fragrant.
Build the Broth
Pour in the chicken broth and crushed tomatoes (if using). Stir in Italian seasoning, basil, thyme, salt, pepper, and crushed red pepper. Simmer for 10 minutes.
Add Tortellini
Add the cheese tortellini directly to the broth. Cook until tender, 5–7 minutes.
Make It Creamy
Reduce the heat and stir in the heavy cream.
Add Greens
Stir in spinach or kale until wilted. Taste and adjust seasoning.
Serve
Ladle into bowls and top with parmesan or parsley if desired.
Notes
Use spicy sausage if you want extra heat.
Don’t overcook tortellini—it should stay soft but not mushy.
Add lemon juice for brightness.
For thicker soup, simmer uncovered a few extra minutes.
