Caramelize the onions:

  • Heat butter and olive oil in a skillet over medium-low heat. Add onions and cook 20–25 minutes, stirring occasionally, until golden and soft. Add garlic, salt, pepper, thyme, and balsamic; cook 2–3 minutes more.

Prepare the base:

  • If using puff pastry: cut into 1.5-inch squares and place in a mini muffin pan.
  • If using baguette: lightly toast slices.
  • If using phyllo cups: place on a baking sheet.

Assemble:

  • Spoon a small amount of caramelized onions into each base. Top with shredded Gruyère.

Bake:

  • Bake at 375°F (190°C) for 12–15 minutes, or until cheese is melted and edges are golden.

Garnish & serve:

  • Remove from oven, top with thyme or chives, and serve warm.

Notes

  • Keep puff pastry cold for best results.
  • For extra depth, add a splash of Worcestershire to the onions.
  • To make ahead: caramelize onions up to 3 days before assembling.
