For the Pasta 10 oz pasta rigatoni penne, or shells Salt for boiling 1 cup reserved pasta water use as needed
Cook the Pasta Bring a large pot of salted water to a boil. Add pasta and cook until just shy of al dente.
Reserve at least 1 cup of pasta water, then drain the pasta.
Sauté Aromatics In a large skillet, heat olive oil over medium heat.
Add garlic and shallots. Cook until softened and fragrant, about 2 minutes.
Combine Pasta + Sauce Add the cooked pasta to the skillet.
Pour in 1/2 cup pasta water, stirring until the sauce becomes glossy and coats the pasta. Add more water as needed.
Finish with Butter + Parmesan
Start with 1 tsp chili flakes if you prefer a mild version.
Add more pasta water for a looser sauce or let it simmer to thicken.
You can add cooked chicken or shrimp for extra protein.
