Preheat oven : Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Cook beef : In a large skillet over medium heat, cook ground beef until browned. Drain excess grease.
Add flavor : Stir in diced onion and garlic. Cook for 2–3 minutes until softened. Add taco seasoning and tomato sauce. Simmer for 5–7 minutes.
Prepare baking dish : Spread a thin layer of enchilada sauce on the bottom of the baking dish.
Fill tortillas : Spoon beef mixture evenly into tortillas. Roll tightly and place seam-side down in dish.
Top with sauce and cheese : Pour remaining enchilada sauce over tortillas and sprinkle with shredded cheese.
Bake : Bake for 20–25 minutes until cheese is melted and bubbly.
Rest and serve : Let rest 5–10 minutes before serving. Add desired toppings.
Warm tortillas slightly before rolling to prevent cracking.
