  • Preheat oven: Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • Cook beef: In a large skillet over medium heat, cook ground beef until browned. Drain excess grease.
  • Add flavor: Stir in diced onion and garlic. Cook for 2–3 minutes until softened. Add taco seasoning and tomato sauce. Simmer for 5–7 minutes.
  • Prepare baking dish: Spread a thin layer of enchilada sauce on the bottom of the baking dish.
  • Fill tortillas: Spoon beef mixture evenly into tortillas. Roll tightly and place seam-side down in dish.
  • Top with sauce and cheese: Pour remaining enchilada sauce over tortillas and sprinkle with shredded cheese.
  • Bake: Bake for 20–25 minutes until cheese is melted and bubbly.
  • Rest and serve: Let rest 5–10 minutes before serving. Add desired toppings.

Notes

  • Warm tortillas slightly before rolling to prevent cracking.
  • Drain beef well to avoid soggy enchiladas.
  • You can assemble ahead and refrigerate for up to 24 hours before baking.
  • Freeze unbaked enchiladas for up to 3 months.
