A quick and healthy one-pan meal combining ground turkey, caramelized sweet potatoes, and warm spices. Ready in about 30 minutes and ideal for weeknights or meal prep.
Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add cubed sweet potatoes and cook until golden and fork-tender, about 8–10 minutes. Remove and set aside.
Add remaining oil to the skillet, reduce heat to medium, and sauté onion and bell pepper 3–4 minutes. Add garlic 30 seconds, then add ground turkey and cook until no longer pink, breaking into crumbles, about 5–7 minutes.
Stir in smoked paprika, cumin, oregano, cayenne, salt, and pepper. Add tomato paste or diced tomatoes and pour in broth, scraping up browned bits from the pan.
Return sweet potatoes to the skillet, stir gently, and simmer 3–5 minutes until the sauce thickens. Adjust seasoning and finish with a splash of olive oil or a pat of butter if desired.
Top with chopped herbs, cheese, a dollop of yogurt, and lime wedges. Serve warm.
Notes
For a spicier dish, increase cayenne or add hot sauce.
To make vegetarian, swap turkey for tempeh or cooked lentils.
