  • 3 large cucumbers thinly sliced (Persian or English recommended)
  • ¼ cup red onion finely chopped, or thinly sliced shallot

  • Wash and thinly slice the cucumbers. Peel alternating stripes or fully peel if skins are thick. For ribbon slices, use a mandoline or vegetable peeler.
  • Whisk together lime juice, lime zest, honey, olive oil, salt, pepper, and red pepper flakes (if using). Taste and adjust sweetness or acidity.
  • Place sliced cucumbers and red onion in a large bowl. Pour the dressing over the cucumbers and toss gently until evenly coated. Fold in chopped herbs if using.
  • Sprinkle toasted sesame seeds or almonds over the salad. Serve immediately for maximum crunch or chill for 10–15 minutes to let flavors meld.

Notes

  • To prevent a soggy salad when preparing ahead, store the dressing separately and toss right before serving.
  • If cucumbers are especially watery, salt them lightly and let sit in a colander for 10 minutes, then pat dry.
  • Adjust honey and lime to taste — start with less honey and add more if desired.
