A bright, crunchy cucumber salad tossed in a sweet-tangy honey lime dressing. Ready in about 10 minutes and perfect as a refreshing side or light snack.
Wash and thinly slice the cucumbers. Peel alternating stripes or fully peel if skins are thick. For ribbon slices, use a mandoline or vegetable peeler.
Whisk together lime juice, lime zest, honey, olive oil, salt, pepper, and red pepper flakes (if using). Taste and adjust sweetness or acidity.
Place sliced cucumbers and red onion in a large bowl. Pour the dressing over the cucumbers and toss gently until evenly coated. Fold in chopped herbs if using.
Sprinkle toasted sesame seeds or almonds over the salad. Serve immediately for maximum crunch or chill for 10–15 minutes to let flavors meld.
Notes
To prevent a soggy salad when preparing ahead, store the dressing separately and toss right before serving.
If cucumbers are especially watery, salt them lightly and let sit in a colander for 10 minutes, then pat dry.
Adjust honey and lime to taste — start with less honey and add more if desired.
