This Italian Herb and Cheese Bread is a soft, fluffy homemade loaf packed with savory Italian seasoning and topped with melty mozzarella and salty Parmesan. It comes together with simple pantry ingredients, rises beautifully, and bakes up golden with a cheesy, flavorful crust. Mix the dough: In a large bowl, whisk flour, yeast, sugar, salt, Italian seasoning, and garlic powder. Add warm water and olive oil. Mix until a shaggy dough forms.
Knead: Knead for 8–10 minutes by hand (or 5–6 minutes with a mixer) until smooth and elastic.
First rise: Place dough in a greased bowl, cover, and let rise for 60 minutes or until doubled in size.
Shape: Punch down dough and shape into a loaf. Place into a greased 9x5-inch loaf pan (or shape into a log on a lined baking sheet).
Second rise: Cover and let rise for 15 minutes while the oven preheats to 375°F (190°C).
