Quick Tzatziki

Instructions

  • In a large bowl combine the ground meat, chopped red onion, minced garlic, oregano, cumin, paprika, salt and pepper. Mix gently until just combined. Divide into 4 portions and form into patties about 3/4-inch thick.
  • Heat a skillet over medium-high heat with olive oil. Cook patties 3–4 minutes per side for medium, adjusting time to your preferred doneness. Transfer to a plate and let rest for a few minutes.
  • Combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, olive oil and lemon juice in a bowl. Season with salt and pepper and stir until smooth. Chill until ready to serve.
  • Divide cooked couscous, quinoa or greens among 4 bowls. Top each with a burger (whole or sliced), a spoonful of tzatziki, cherry tomatoes, cucumber, olives, red onion and crumbled feta. Garnish with chopped herbs and a lemon wedge.
  • Serve immediately with extra lemon wedges and hot sauce or harissa if desired.

Notes

  • For a lighter bowl, use ground turkey or a plant-based patty.
  • Keep wet toppings separate for meal prep to avoid soggy grains.
  • Patties can be shaped ahead of time and refrigerated for up to 24 hours.
  • To freeze uncooked patties, flash-freeze on a tray then store in a bag for up to 3 months.
