A vibrant Mediterranean-inspired bowl with juicy spiced burger patties, tzatziki, cucumber, cherry tomatoes, feta and olives served over couscous, quinoa or greens.
In a large bowl combine the ground meat, chopped red onion, minced garlic, oregano, cumin, paprika, salt and pepper. Mix gently until just combined. Divide into 4 portions and form into patties about 3/4-inch thick.
Heat a skillet over medium-high heat with olive oil. Cook patties 3–4 minutes per side for medium, adjusting time to your preferred doneness. Transfer to a plate and let rest for a few minutes.
Combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, olive oil and lemon juice in a bowl. Season with salt and pepper and stir until smooth. Chill until ready to serve.
Divide cooked couscous, quinoa or greens among 4 bowls. Top each with a burger (whole or sliced), a spoonful of tzatziki, cherry tomatoes, cucumber, olives, red onion and crumbled feta. Garnish with chopped herbs and a lemon wedge.
Serve immediately with extra lemon wedges and hot sauce or harissa if desired.
Notes
For a lighter bowl, use ground turkey or a plant-based patty.
Keep wet toppings separate for meal prep to avoid soggy grains.
Patties can be shaped ahead of time and refrigerated for up to 24 hours.
To freeze uncooked patties, flash-freeze on a tray then store in a bag for up to 3 months.
