  • 2 tbsp honey or maple syrup for vegan
  • 1 tbsp fresh lime juice or lemon juice
  • 1 tsp orange zest optional
  • ½ tsp vanilla extract optional

  • Rinse berries gently and pat dry. Slice peaches into wedges or bite-size slices. If using apple, dice and toss with a little lemon to prevent browning.
  • Whisk together honey, lime juice, orange zest, and vanilla in a small bowl until smooth. Adjust sweetness or acidity to taste.
  • Combine all fruit in a large bowl. Drizzle the dressing over the fruit and fold gently with a large spoon to coat without crushing berries.
  • Add chopped mint and toasted nuts if using. Serve immediately or chill for 20–30 minutes. Add crunchy toppings just before serving.

Notes

  • Choose ripe, fragrant peaches for best flavor.
  • If making ahead, keep dressing separate and toss just before serving.
  • Toasted nuts add a pleasant crunch — add them right before serving to maintain texture.
