Slice peaches into wedges or 1-inch cubes and cut watermelon into uniform 1-inch cubes. Chill briefly if needed.
Combine olive oil, honey, lime juice, and lime zest in a small bowl. Season with salt and pepper and taste-adjust as needed.
In a large bowl, gently toss peaches, watermelon, and mint with about two-thirds of the dressing to avoid crushing the fruit.
Top with crumbled feta and toasted pepitas. Drizzle remaining dressing to taste and serve immediately for best texture.
