  • Slice peaches into wedges or 1-inch cubes and cut watermelon into uniform 1-inch cubes. Chill briefly if needed.
  • Combine olive oil, honey, lime juice, and lime zest in a small bowl. Season with salt and pepper and taste-adjust as needed.
  • In a large bowl, gently toss peaches, watermelon, and mint with about two-thirds of the dressing to avoid crushing the fruit.
  • Top with crumbled feta and toasted pepitas. Drizzle remaining dressing to taste and serve immediately for best texture.

Notes

  • Add cheese and pepitas just before serving to keep the salad from becoming soggy.
  • To make vegan, substitute feta with a vegan cheese or omit entirely and increase toasted seeds.
  • Toast nuts or seeds in a dry skillet for more flavor.
