Prep the Slow Cooker

  • Place the potatoes at the bottom of your slow cooker. Season lightly with salt and pepper.

Optional: Brown the Beef

  • Sear beef cubes in a hot skillet for 2–3 minutes per side to add deeper flavor. (Recommended but not required.)

Add Beef to the Cooker

  • Place browned or raw beef on top of the potatoes. Add diced onion if using.

Make the Garlic Butter Sauce

  • In a small bowl, mix melted butter, minced garlic, paprika, Italian seasoning, salt, and pepper. Pour evenly over the beef and potatoes.

Add Broth

  • Pour beef broth around the edges (don’t rinse off the seasoning).

Cook

  • LOW for 6–8 hours
  • HIGH for 3–4 hours
  • Cook until beef is tender and potatoes are soft.

Finish & Serve

  • Stir gently, taste, and adjust seasoning. Garnish with fresh parsley and serve warm.

Notes

  • Beef Chuck gives the most tender results after slow cooking.
  • Add mushrooms, carrots, or green beans during the last hour for a fuller meal.
  • For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir in during the last 20 minutes.
