Season the Chicken

  • Rub chicken with olive oil, salt, pepper, and Italian seasoning.

Optional Browning for Flavor

  • Sear chicken in a hot skillet for 2–3 minutes per side until golden.

Layer the Slow Cooker

  • Add onions, garlic, butter, and broth into the bottom of the slow cooker.

Add Chicken & Lemon

  • Place the chicken over the onions. Pour lemon juice on top, sprinkle zest and herbs.

Cook

  • Low: 6 hours
  • High: 3–4 hours
  • Chicken should be tender and easily shredded.

Finish & Serve

  • Taste and adjust seasoning. Garnish with parsley and extra lemon slices.

Notes

  • Fresh lemon zest gives a brighter citrus flavor.
  • If sauce thickens too much, stir in a splash of broth before serving.
  • Add veggies like carrots or potatoes for a one-pot meal.
