  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • 1 tbsp olive oil

For the Thai Peanut Sauce:

  • ½ cup natural peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp sesame oil
  • 1 clove garlic minced
  • ½ tsp fresh ginger grated
  • Water as needed to thin

For the Wraps:

  • 4 large tortillas or flatbreads
  • 1 cup shredded carrots
  • 1 cucumber sliced into matchsticks
  • 1 cup shredded red cabbage
  • Fresh cilantro or basil leaves
  • 2 tbsp crushed peanuts for garnish

Instructions
 

  • Prepare the Chicken: Season chicken with soy sauce, garlic powder, and ginger. Heat olive oil in a skillet or grill pan, cook chicken until fully cooked, then slice or shred.
  • Make the Peanut Sauce: In a small bowl, whisk together peanut butter, soy sauce, honey, vinegar (or lime juice), sesame oil, garlic, and ginger. Add water slowly until smooth and creamy.
  • Assemble the Wraps: Warm tortillas slightly. Spread peanut sauce over each tortilla. Add chicken, carrots, cucumber, and cabbage. Top with cilantro and crushed peanuts.
  • Serve and Enjoy: Roll tightly, slice in half, and enjoy immediately.
