- 6 cups seedless watermelon cubes about half a medium watermelon
- 1 tbsp fresh lime juice about half a lime
- 1 tsp honey or agave, optional
- Ice cubes for serving

Cut the watermelon into cubes and remove any large seeds. Seedless watermelon is easiest, but small seeds are fine if you strain later.
Place watermelon cubes, lime juice, and honey (if using) in a blender. Add mint or ginger if desired. Blend on high until smooth.
For a silky texture, pour through a fine mesh sieve into a pitcher, pressing to extract the juice. Skip if you prefer pulp.
Refrigerate for 15–30 minutes or pour over ice. Top with sparkling water for fizz if you like.
Add mint sprigs, lime wheels, or a small watermelon wedge for a pretty finish.
- Adjust honey to taste — ripe watermelon may not need extra sweetener.
- Freeze watermelon cubes for an instant slush or to use as ice without diluting the flavor.
