1 cup whole kernel corn fresh, canned, or frozen ½ cup creamed corn 1 cup all-purpose flour 2 tbsp cornmeal 1 tsp baking powder 1 tbsp sugar ½ tsp salt ½ cup milk 1 egg Oil for frying Optional Add-Ins ½ cup shredded cheddar cheese Diced jalapeños Chopped scallions or herbs Chili powder for heat
Chill the filling : Mix whole kernel corn with creamed corn and freeze for 30 minutes to firm up.
Make the batte r: Whisk together flour, cornmeal, baking powder, sugar, salt, milk, and egg until smooth.
Shape & coat : Scoop chilled corn mixture into spoonfuls and coat in batter.
Cook: Fry : Heat oil to 350°F (175°C) and fry nuggets 2–3 minutes per side until golden.
Bake : Place on a lined tray, bake at 400°F (200°C) for 15–18 minutes, flipping halfway.
Air Fry : Cook at 375°F (190°C) for 10–12 minutes, spraying lightly with oil.
Serve warm : Drain on paper towels and enjoy immediately with dipping sauces.
