Ingredients
  

  • 1 cup whole kernel corn fresh, canned, or frozen
  • ½ cup creamed corn
  • 1 cup all-purpose flour
  • 2 tbsp cornmeal
  • 1 tsp baking powder
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ cup milk
  • 1 egg
  • Oil for frying

Optional Add-Ins

  • ½ cup shredded cheddar cheese
  • Diced jalapeños
  • Chopped scallions or herbs
  • Chili powder for heat

Instructions
 

  • Chill the filling: Mix whole kernel corn with creamed corn and freeze for 30 minutes to firm up.
  • Make the batter: Whisk together flour, cornmeal, baking powder, sugar, salt, milk, and egg until smooth.
  • Shape & coat: Scoop chilled corn mixture into spoonfuls and coat in batter.

Cook:

  • Fry: Heat oil to 350°F (175°C) and fry nuggets 2–3 minutes per side until golden.
  • Bake: Place on a lined tray, bake at 400°F (200°C) for 15–18 minutes, flipping halfway.
  • Air Fry: Cook at 375°F (190°C) for 10–12 minutes, spraying lightly with oil.
  • Serve warm: Drain on paper towels and enjoy immediately with dipping sauces.
